Thai Omelette

Ingredients

200g chicken breast
2 1/2 tablespoons coconut oil
3 eggs
3 gloves of garlic
2 coriander root
1 tomato
1/2 carrot
1/2 onion
1 teaspoon soy sauce
1 table spoon oyster sauce
1 1/2 tablespoon tomato sauce
pinch of salt

METHOD

1. Cut up chicken into pieces
2. Dice up carrot, onion and tomato
3. Finely cut garlic and coriander root

TIME TO COOK

Heat up pan
Put 1 tablespoon of coconut oil
Add garlic and coriander root cook until golden colour
Then add carrot cook until soft
Add chicken
Add onion and tomato until soft
Add soy sauce and oyster sauce
Add pinch of salt
Stir for about 2 min once cooked take of heat and let it rest
Beat 3 eggs together
Add coconut oil to pan
Add your 3 beaten eggs {on a low heat}
Roll your eggs around the pan so smooth and even around pan
Now add your already cooked chicken and vegetables into the middle of eggs
Then fold your eggs over your chicken mix into a square.
Put your now finished omelette onto a plate
Cut your omelette from corner to corner to as in picture open to serve.
