Spicy Thai Style Chicken & Herb Salad

A fragrant and fresh chicken salad with the flavour of Thailand

Ingredients

350g Chicken Mince
1 tablespoon Basil Stir-in Paste, Gourmet Garden
1 teaspoon Mild Chilli Stir-in Paste, Gourmet Garden
1 tablespoon brown sugar
1/2 teaspoon finely grated lime zest
2 tablespoon Mint Stir-in Paste, Gourmet Garden
2 tablespoon Coriander Stir-in Paste, Gourmet Garden
1 medium red onion thinly sliced
2-3 Lebanese cucumbers in ribbons
2-4 limes

Method

1. In a lightly greased frying pan saute chicken mince and basil over medium heat until chicken is cooked and liquid has evaporated. Use a fork to break up any lumps as mince cooks.
2. Stir through chilli, sugar and lime zest and tip into a bowl. Set aside to cool.
3. To finish gently toss chicken with the mint, coriander, onion and cucumber. Add lime juice to taste, check seasoning and serve into bowls or spread on a serving plate. Garnish with lime wedges, for squeezing.
