Spicy Pumpkin and Feta Stuffed Chicken Breasts with Moroccan Seasoning
These are a wonderfully easy dish with ever-popular chicken. They take no time to prepare and you can mix and match your fillings depending on what you have!
4 chicken breast fillets
100 g feta crumbled
100 g sliced roasted pumpkin or roasted capsicum (from the deli or make your own)
2 tablespoons Moroccan Stir-In Seasoning, Gourmet Garden
Method1. Cut the chicken fillets open lengthways and open up. Flatten a little with a mallet and then season with salt and pepper
2. Stuff/fill with the roast pumpkin slice or capsicum slice and the feta
3. Now brush with the Gourmet Garden Moroccan Paste and then place on a baking tray. Drizzle with a little olive oil to baste and then place in a pre-heated oven of about 190°C for about 12-18 minutes until the breasts have cooked through and the paste has browned off and is wonderfully fragrant.
