Spicy Atlantic Salmon with Lime and Coriander Mayonnaise

Salmon cooked in minutes, with a tangy lime and coriander mayonnaise

Ingredients

1 Atlantic Salmon
½ teaspoon each of turmeric chilli powder and sea salt
½ cup whole egg mayonnaise
finely grated zest of 1 lime
2 tablespoons lime juice
1 tablespoon Coriander Stir-in Paste, Gourmet Garden
½ x 500 g packet frozen Birds Eye Baby Beans cooked

Method

1. Mix together the turmeric, chilli powder and sea salt and rub evenly over the salmon.
2. Heat a non-stick pan and spray lightly with oil. Add the salmon and cook for 2-3 minutes on each side, or until done to your liking.
3. Stir together the mayonnaise, coriander, lime zest and juice.Serve salmon with the beans and a generous drizzle of mayonnaise.
