Peri Peri Fish Fillets With Lemon Coriander Rice

A healthy and flavoursome ingredient combination to tingle the taste buds.

Ingredients

600-750 g fish fillets of your choice
1 tablespoon Chilli, Hot or Mild Stir-in Paste, Gourmet Garden
1/2 teaspoon Chunky Garlic Stir-in Paste, Gourmet Garden
1 tablespoon tomato paste
1 lemon zested and juiced
1/2 teaspoon sweet or smoked paprika
1/4 teaspoon ground turmeric powder
2 teaspoons olive oil salt
2-3 cups long grain rice
1 lemon zested and juiced
1 tablespoon Coriander Stir-in Paste, Gourmet Garden
1 teaspoon Garlic Stir-in Paste, Gourmet Garden salt

Method

1. Combine chilli, garlic, turmeric, tomato paste, paprika, lemon or lime zest and juice, salt and olive oil. Mix all ingredients into a smooth paste.
2. Brush paste over your fish fillets and then place fillets on a greased baking tray.
3. Place fish in a pre-heated oven of 220⁰C for about 8 minutes and then switch your oven over to grill for about 5 minutes or until coloured and fragrant.
4. Combine lemon coriander rice ingredients, heat if necessary, and serve with fish.
