Beef Skewers with Balsamic Vinaigrette

A quick, tasty and healthy BBQ idea


Bamboo skewers
700 g beef cubed
1 red capsicum cubed
1 yellow capsicum cubed
2 zucchini sliced
2 red onions cut in wedges
½ Balsamic Vinaigrette


1. Cut meat & vegetables into cubes and thread onto skewers.
2. Cook on a BBQ, in a fry pan or under the griller.
3. Can Drizzle coconut oil over it if you wish.
4. Brush with extra Balsamic Vinaigrette whilst cooking, turning regularly until cooked

Tip: Put the meat in a bowl in the morning and leave in the fridge to marinate . it will be ready for dinner.
