Atlantic Salmon with asparagus

Atlantic Salmon and asparagus, simple but luxurious


1 John west Chilled Atlantic Salmon
1 bunch asparagus (white or green)
salt and freshly ground black pepper
1//4 cup creme fraiche 65 ml
1 teaspoon grated lime rind
2 tablespoon Dill Stir-in Paste, Gourmet Garden


1. Cook John West Salmon following packet directions.
2. Cook asparagus in lightly salted water for 2 minutes. Drain.
3. In a frying pan, gently stir together crème fraiche, lime rind and dill and heat on medium for 30 seconds. Add the asparagus and warm through.

Serve salmon on warmed plates, with the asparagus and sauce.
